Note: Women can of course make this too. In fact, I made it myself last night. It’s just usually preferable to have your man / toddler / passing Jehovah’s Witness do it for you instead, while you put your feet up with a cuppa and some antioxidant-packed dark chocolate. (“I’m only eating it for the antioxidants,” you can then yell at their raised eyebrow, hauling yourself up to slam the door in their face before tucking your feet under you with the telly remote. This sustenance should allow you to take a suitable picture, should the urge take you, before swallowing three-quarters of the pie upon removal from the oven.
So yes, it’s dead easy – a toddler could manage it; so frustrating when you know they’re capable but they just won’t step up – and super quick too.
Here’s what I did:
(Now I know a tad more accurate ingredient amounts might be appreciated, but I feel…*tunnel*…) (And if in doubt, add more cheese.)
- In a large bowl, mix 1 bag spinach, 1 pack feta cheese, 2 eggs, and 1 tsp nutmeg.
- Pour into a buttered dish. Cover with 1.5 cups breadcrumbs mixed with 30g butter.
- Cook in a preheated 180°C oven for 35 minutes.
Go to the park while it’s cooking. Have fun practising headstands. Return home and scoff dinner. And then some.
